I did caramelize the topping onions with a small amount of brown sugar and used a whole carton 5 or 8 oz of arugula. Delish We liked it so much Ive just processed 2 more batches with onion and wine and cooked them down to Freeze. Added a bit more white winesherry while reducing the carrots, which helped the puree flavor. Made with rocket not with the carrot fronds, so had a nice fresh peppery punch on top. Also added a light sprinkle of thyme on the pizza before baking. Definitely a keeper. Will make again. Frankly, carrot greens, or fronds, arent good for ANYTHING. They taste just awful. Why do you think no one eats themMight as well throw lawn clippings on your pizza.
