I took the advice of previous reviews and mixed my butter in the batter and sprinkled some coarse salt on top of the dough once it was in the bread pan. For the beer I used Yuengling, because that was in the fridge, I also greased the bread pan with olive oil prior to placing the dough in it. I will definitely be making this bread again it went very well with my Green Soup. Im not rating this recipe because I didnt want to affect the results of the ratings. These came out terrible due to what may have been my own mistake in making them. I think the bread flour I used was rancid, Im usually careful about checking dates but was rushing I didnt this time the flour was past its expiration date. Another factor could be that I used an Oktoberfest beer dont know if that had anything to do with the bitter taste of the bread. The bread went in the trash along with the expired flour. Lesson learned check the date on my bread flour before making bread lol. This recipe isnt real clear about the use of the butter other than brush the pan. All that butter leaves a big puddle and the batter is so dry you cant mix all the flour in never mind leaving some dry bits or POURING the batter into the pan. So I added all the butter to the batter. I also used Guinness and coarse salt on top as suggested in other reviews. The flavor is wonderful, but I gave it only 3 stars because the instructions should be more clear. I will make it again though. I wansnt ckear on the melted butter. I buttered pan poured in batter and added rest of butter on top and brushed well. Results are fantastic. Crispy crust and moist inside. Will make again Will use Gluten Free Flour and Gluten Free been and make this, let you know how it turns out. I substituted GF flour and added 2 tbsp Xanthum gum plus some aged Gouda cheese and dried onions and it is delicious. I have added it to my recipe box. This is my go to savory quickbread recipe. Its flexible and easy. I have replaced 23 of the flour with whole wheat successfully, and have left out the butter in favor of a quick spray of the pan with oil, also successfully. The key to this recipe turning out will is not to over mix the batter. Really, its better to have it be lumpy with even a few dry bits, than to over mix it and risk it being dense and chewy. A very hoppy ale can taste odd in this, but play around with beers hefeweizen, stout, and barleywine can all be great for different tastes. This bread was super easy. I made it in the morning for breakfast with a poached egg and a kale salad. I used 2 cups of whole wheat flour and 1 cup of spelt flour. I also used half amount of the butter required and sprinkled some Maldon on top. I used Pork Slap Ale my fav I will def make this again. If you like Irish Soda Bread, this type of bread will be to your liking as well. It is very quick and good. I used Sam Adams Original and about 12 of the melted salted butter. Will make it again and try some variations as suggested in the reviews. Mine looked just like the picture, the top is crusty and bumpy looking. Also, I did use some of the butter to grease the loaf pan. Loved the flavor and texture when made by a friend not sure if it was the same recipe. But my batch had a horribly bitter aftertaste. We used Sam Adams Lager, so Im going to try a richer, but less bitter beer. Probably use suggestions from other reviewers. This is such a great recipe So easy and yet it was the highlight of an otherwise elaborate dinner. I have tried it with Guinness with good results and then light beer which lacked flavor. Last night I made it with Pacifico and had an excellent beer flavor that was not overpowering Made this last night with Michelob Ultra, since thats what we were given as a thank you gift. Havent drank beer since first semester of college and it looks like I never will again, so this is the best use for it. Good jumping off place for lots of variations. I would think an earthy dark beer would do better, but the Ultra didnt ruin it either. Lighten up on the butter 3 Tbsp melted is plenty to cover the loaf pan and have lots left for drizzling on top. Makes a nice crust. Will put this recipe in my fave box. Really good recipe I used some not so good home brew, cut back on the sugar and butter, added some thyme. Delicious About to make another loaf I have a lot of bad home brew to use up Instead of using a pan, drop dough ball. You make an. oblong shape, and get 2 batches on one. Ive made this with every kind of leftover beer even Guiness and it always is a hit. If you do happen to have any leftover bread, it makes awesome toast the next morning I love this recipe and make it all the time. Any time my meal could use a hearty bread on the side, this is my old standby. There are a couple modifications that I use though the butter called for is way too much, you can easily cut it in half or better. Then, I always sprinkle the top of mine with fresh ground sea salt just before baking. That makes a huge difference. It gives the crust a delicious, buttery, salty flavor, almost like a soft pretzel. And finally, my most important piece of advice USE DARK BEER. You wouldnt think it would make a difference, but it does. I tried making this with bud light once and it didnt even cook right overdone outside, doughy inside I think that may be because of too much water, not enough yeast in light beer. I typically use Guinness and it turns out great By the way. This recipe is super easy Its best eaten warm, but thats not a problem its usually gone long before it gets a chance to cool downThis recipe was delicious. I added shredded cheese, garlic powder, and onion powder. I also mixed a tablespoon of beer in with the butter to spread over the bread batter before baking. I took 1. 0 minutes off of the baking time. Over all it came out excellent. This will definitely be a regular at the dinner table. I will replace flour with whole wheat flour.
